And other perfectly good reasons to have chocolate chip pumpkin bread on no real sort of special occasion at all.  


We're fighting that little stinker of a flu bug again.  'Seems some little germy someone didn't get the memo that February was going to be all sorts of care free and healthy here in paradise.  But that's okay.  'Cause this valentine filled season of love coupled with our mission to eat ourselves out of pantry and home, really,  I've pulled all of the canned goods from the pantry and have been on a mission to use them up before we move, means I'm in the mood for creative coddling of body, heart and soul.  And so, when it came down to going all sorts of cooped up coo kookaroo or stuffing our sniffling souls with chocolate chip filled pumpkin bread, well, we went with the pumpkin bread.  

I give you my "what will we do with a 24 oz can of pureed pumpkin" inspired coddling.       

Chocolate Chip Pumpkin Bread 
(A big huge giant batch of it)

1 24 oz can pumpkin puree
8 eggs
2 cups vegetable oil
1 1/3 cup water
3 cups white sugar
3 cups brown sugar
7 cups flour
4 teaspoons baking soda
1 tablespoon cinnamon
1 teaspoon ginger
3 cups semi sweet chocolate chips

Preheat oven to 350.  Grease and flour a large sheet cake pan.  

Mix pumpkin, eggs, oil water and sugar until well blended.  Add Flour, baking soda, cinnamon and ginger.  Mix well.  Stir in chocolate chips.  Pour batter into pan.  Bake 40 to 50 minutes. 

Remove from oven as soon as fork inserted in center comes out clean.


I know, I know, this is a big huge giant of a recipe.  But, I'm trying to clean out the pantry here guys.  And, also, I had every intention of taking a tray full of these moist slices with us to a kite flying picnic in the park with friends.  

We stayed home sick, sick, sick instead.  

That there pumpkin bread, with a side of Downton Abbey season three, helped cosset our fragile spirits.

    1. apparently pumpkin chocolate chip cookies are all the rage, we discovered this in Utah, who knew?

    1. Oh you have to hook yourself onto that drama filled abbey, if for no other reason, so that we can be on the same emotional roller coaster together.

      So... We leave in a couple weeks and I've packed, like, one box of chipped dishes... send help.
